C'mon now, you knew I was going to have to make these after my first post ;0)
This batch is also fated to Mr JS, we are going around for his infamous Maggie Beer's (we love Maggie!) Roast Chook for dinner tonight and I though these would make a nice thank you gift. I'm soooooooooo looking forward to it! While Mr JS was in Australia he got to help out at a luncheon hosted by Maggie, not only did he get to meet her, he also got to eat lunch with her ... I'm not jealous ... much!
So, to make the Friesian version of Cowkies all I did was omit the cocoa powder and replace the amount with more plain flour. I also opted to use caster sugar instead of the brown sugar but next time I think I'll try light brown sugar and hope it doesn't effect the colour too much. The 'plain' batch of dough was much drier than the chocolate one and I am wondering if this is because the caster sugar isn't as 'fudgy' as the brown sugar. I also swapped the choc chips around, white choc chips in the chocolate mix, and milk chocolate choc chips in the plain mix. Passed experience has also taught me that the amount of choc chips in the original recipe made them hard to roll so this time there is just 100g in each dough.
I love the way the two doughs have blended together, making each Friesian Cowkie individual and unique.
And each bite is still positively chock full of chocolatey goodness! See that oozy chocolate in the top left hand corner of the cowkie? Oh yeah ... that's chocolatey goodness in action! At this rate Mr JS will be lucky if any of them make it to his place. Must. Show. Restraint.
