... although in this case its actually a banging banana, pecan and hazelnut and sultana bread!
The Hairy Bikers 'Banging Banana, Walnut and Sultana Bread'
225g SR flour
1/2 tsp salt
125g butter
150g caster sugar
2 free range eggs, lightly beaten
170g shelled walnuts, broken into pieces
170g sultanas
450g bananas - the ripest you can find
preheat the oven to 180C. Grease a 900g loaf tin and sprinkle the inside with flour.
Tip the flour into a large mixing bowl, add the salt and mix together. Cut the butter into cubes and run it into the flour with your fingers until the mixture has a crumb like texture. Add the caster sugar and the eggs and mix thoroughly, then stir in the walnuts and sultanas. Mash the bananas in a seperate bowl and when they are really sludgified, fold them into the mixture (I used a mini food blender to do this bit).
Spoon the mixture into the prepared loaf tin and bake for about an hour, although it took closer to an hour and a half for me ... and I had to pop a bit of foil over the top for the last half hour or so to stop the top from burning to a crisp. Leave to cool in the tin for 5 mins, thent urn it out onto a wire rack. Serve warm with ice cream or leave it to cool and enjoy with a nice cuppa. Hubby prefers his with spread for morning tea.

I usually use pecans rather then walnuts, they have a creamier flavour! What a deliciously tasty looking loaf, Jude x
