While I'm here I thought I'd share with you this fab recipe for a summer cordial. Even if summer has bypassed your neck of the woods I can guarantee you that a quick snifter made with some of this golden nectar will have you forgetting just how many sandbags it takes to keep the rising water from your front door, course the speediness of the forgetting factor is entirely dependant on what you choose to mix the cordial with, wink wink!
Passionfruit Cordial
350ml passionfruit pulp (from roughly 8 passionfruit)
385g caster sugar
60ml lime juice (about 1 lime)
2 tsp white vinegar
Process the pulp in a food processor to seperate juice from seeds, then strain through a sieve to yield 250ml liquid (discard the seeds). Transfer to a large saucepan over medium-high heat, add sugar, lime juice and 150ml water, stir until sugar dissolves. Bring to the boil, reduce heat to medium and simmer until syrupy (6-8 mins). Remove from heat, add vinegar, skim scum from the surface, transfer to a sterile bottle and refrigerate until cool.
The cordial will keep in the fridge for about a month.
Makes about 500ml

I've used the cordial to make a cocktail, adding 1 shot of the cordial to 1 shot of peach schnapps in a glass with some ice. I then topped this up with Sprite and stirred to mix together.
Australian Gourmet Traveller suggest a non alcoholic alternative of pouring the cordial to taste into a tall glass filled with ice, squeeze in some lime wedges to taste, add mint and top up with mineral water, stir to combine and serve.
