Triple Chocolate Muffins

The technology issues are far from over, but I think those that remain is more about my ability in coming to terms with my laptops new 'personality' rather than anything else.  I think the old hard drive and I were kindred spirits in different forms, the new hard drive and I must of been arch enemies in a previous life!  Ho-hum ... moving on ;0)

This is a recipe I made last month for Chocolate Teapot's birthday.  Owing to my previously mentioned laptop issues though I haven't been able to post them sooner.  So, without any further ado, here they are;


Triple Chocolate Muffins
100g cooking chocolate
300g self raising flour (sifted)
1tsp baking powder
100g dark muscovado sugar
250ml milk
50g melted butter
2 eggs, beaten
50g dark chocolate chips
50g white chocolate chips

Preheat the oven to 200C. Break the chocolate into a bowl and heat over a pan of simmering water untill melted.

Sift the flour and baking powder into a bowl. In a separate bowl add the muscado sugar, melted chocolate, butter, milk and eggs and mix well. Carefully fold in the flour, taking care to not over mix. Stir in the chocolate chips.

Spoon the mixture into paper muffin cases and bake for 25 minutes or until muffins have risen and are firm to touch. I only baked them for 20 mins and they turned out perfectly, I also used an ice cream scoop to measures the batter into the cases, two scoops per case.  Remove from the oven and cool for 5 minutes.

Serve warm or cold.

Makes 6 muffins - I got 9 big muffins from this recipe

I spotted these lovely muffin cases while on a recent shopping trip ... and to be honest it was the cases that made me want to bake these muffins.  I first came across this recipe many a few years ago when my Mum and I held a Tupperware party (do those still exist or have they all been replaced with Jamie Oliver's JME range or The Pampered Chef) and the muffins were amazing.  Sadly, throughout the years and moves from one country to another I have lost the original recipe but I managed to find the above recipe which is pretty much the same.  The muffins are so good still warm from the oven with a little whipped cream should the urge take you.
